BART'S CHEESE AND CHIVES SCONES

Ingredients
• 1 kg self-raising flour
• ½ teaspoon fine salt
• 3 eggs
• 100ml Jingilli Devine Extra Virgin Olive oil
• 220ml milk
• 100g grated cheddar cheese
• ½ cup chopped fresh chives
• To taste Jingilli extra virgin olive oil & apple balsamic
Method
Pre heat the oven to 210°C. Sift the self-raising flour and salt twice and place into a mixing bowl.
Combine together the eggs, Olive oil, milk and enough warm water to make up a total of 700mls of mix. Add this to the flour mix and combine well.
Combine in the chopped chives and half the cheese then kneed to form a smooth dough. Let the dough rest for 10 minutes and roll out to a thickness of 25mm. Cut into rounds, brush with egg wash (1 egg mixed with ¼ cup of milk), place onto a floured baking tray and sprinkle with the remainder of the cheese.
Bake for 20 minutes and serve with a dipping bowl of olive oil and apple balsamic
