The term "Cold Pressed" relates to oil being pressed under 28 degrees celcius or room temperature.

Traditionally olive paste was pressed to make extra virgin olive oil then mixed with hot water or steam and pressed again to extract more oil. It was discovered that the first pressing without the heat resulted in a better quality oil hence the terms "First Pressed" and "Cold Pressed".
