FRUITY - A
set of olfactory sensations, characteristics of the oil which
depends on the variety and comes from sound, fresh olives,
either ripe or unripe. Examples include apple, almond, ripe
berry, artichoke, green tomato and olive.
FRESHLY CUT GRASS - Is the aroma
given from good quality olives that have recently been processed.
BITTER - A taste
sensation from olives experienced on the mid palate.
It can be a pleasant taste depending on intensity.
PUNGENCY - The biting peppery
sensation at the back of the throat, characteristics of oils
produced early in the season or from unripe olives. The level
of pungency can indicate the freshness of the oil.
