HOW TO TASTE OLIVE
OIL The oil has to be warmed to accentuate
definition and volatility. To warm oil, place the cup in the
palm of the hand and cover the cup with the other hand.
Move hands in a circular motion and continue
rotating until there is no temperature difference between the
cup and your hand.
Close eyes to block outside stimuli, inhale
the oil, then let the oil slowly flow over the tongue and palate.
Breathe in. The air flowing over the palate
will accenutate the flavour of the oil in the mouth. Oil
can be swallowed or spat out. At this stage positive and negative
aromas can be detected.
